For the choux pastry:
150 g butter
220 g all-purpose flour
6 eggs
1 tbsp sugar
1 tsp vanilla sugar
1 pinch of salt
For the coffee caramel cream:
400 ml whipping cream
2 tbsp dulce de leche
½ tsp instant coffee
50 g powdered sugar
For the chocolate glaze:
100 g dark chocolate 80%
1 tbsp olive oil
