One of my favourite summer dishes! So good and fragrant I really love eggplant parmesan.

Ingredients for 6-8 servings:
5 eggplants
250 g mozzarella cheese
750 ml tomato passata
3 cloves of garlic
2 sprigs basil
½ onion
1 tsp oregano
all-purpose flour
50 ml extra virgin olive oil
