Full Description
A classic Italian recipe from the beautiful Sicily! Pasta alla norma is a magical, very simple pasta! The original recipe calls for “ricotta salata”, but I didn’t use it, so I finished with some pecorino! Bon Apettito!

Ingredients for 2 servings:
250 g pasta linguine
400 g plum tomatoes
1 eggplant
2 cloves of garlic
1 tbsp capers
½ tsp chilli flakes
1 tsp oregano
1 tbsp red wine vinegar
pecorino cheese
80 ml olive oil
Salt and black pepper
